Ingredients 1 avocado2 tbsp fat-free yogurt½ lemon, juiced2 slices rye bread, toasteda pinch cayenne pepper75g smoked salmon1/4 cucumber, ribboned with a veg peelera handful salad cress DRESSING½ red chilli, seeded and finely dicedfinely chopped to make 1 tbsp mint½ lemon, zested and juiced1 tomato, finely diced1 tsp white wine vinegar Method Make the dressing by mixing all the ingredients together with some seasoning. Halve the avocado, remove the stone and scoop the flesh into a bowl.Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
