Vegetarian Burrito (Copycat Chipotle) recipes, January 10, 2023January 10, 2023 This Mexican menu has always been a crowd pleaser! One of my favorite menus to serve at a party or picnic. INGREDIENTS 1 large tortilla (10″ round)3/4 cup Cilantro Lime Rice1/2 cup Black Beans1/2 cup Fajita Veggies1/4 cup Pico de Gallo1/2 cup Corn Salsa2 tbsp Sour Cream1/4 cup shredded Montery Jack Cheese1/4 cup Guacamole1 cup Romaine Lettuce (shredded) Method Place a large tortilla (10″) on a flat surface. (Note: I like to heat my tortilla first on the stove at a low flame. Heat both sides of the tortilla till lightly brown. Alternatively, you could microwave the tortilla.) Start with a bed of Cilantro Lime Rice (3/4 cup) Layer Black Beans on top (1/2 cup) Add Fajita Veggies (1/2 cup) Top with Pico de Gallo (1/4 cup) Add Corn Salsa (1/2 cup) Spoon Sour Cream on top (2 tbsp) Sprinkle shredded Monterey Jack Cheese (1/4 cup) Add Guacamole (1/4 cup) Top off with Romaine Lettuce (1 cup) Roll up the burrito.
